James Brown

James trained at Thomas Danby College under the guidance of David Box, an esteemed professional having worked at Claridge’s and alongside Raymond Blanc. He completed his Professional Kitchen Diploma level 3.

James began his professional career at Malmaison Brasserie Leeds learning important culinary skills including matching flavours and textures. Having worked in various sections of the kitchen, James gained the experience and understanding of the way in which a professional kitchen works.
Having had a great 18 months at Malmaison, James got the opportunity to work at one of Leeds Top Sushi restaurants where he learnt more about the art of Sushi, for which he has always had a passion. 12 months experience provided him with a great knowledge and understanding of Sushi that James loves to incorporate into his dishes to this day.
Continuing his study of worldwide cuisine, James spent 12 months working at Arcimboldo’s delicatessen in Harrogate which specialises in Italian/French Cuisines. Having spent this year with Arcimboldo’s enabled James to further develop his knowledge of new cuisines and ingredients, particularly in Pan-Asian and European dishes.

A Celebrity Twist
To add a celebrity twist, James has had the pleasure of cooking for well known clients including Patsy Kensit, The England Cricket Team, Carol Vorderman and Chris Moyles to name a few.
