Who Are We?

James Brown

Executive Chef

James Brown

I started this business nearly 13 years ago because I love to make people happy with my food and hospitality. The Nomad ethos remains precisely the same today and in everything we do.

My culinary journey started at Thomas Danby College in Leeds under the tutorage of esteemed chef David Box who has worked under such greats as Raymond Blanc and Pierre Koffman.

My first profession kitchen was at Malmaison Brasserie in Leeds where I learnt important culinary skills including matching flavours and textures. I also had the opportunity to work at one of Leeds top sushi restaurants where I learnt more about the art of Sushi, which has always been a passion of mine.
I then continued my study of worldwide cuisine, working at Arcimboldo’s delicatessen in Harrogate which specialises in Italian/French Cuisines for nearly a year.

If I was going to get married again, I would have Slow Cooked Persian Lamb with Sumac and Pomegranate Jus. We serve it with Textures of Carrots, Chargrilled Hispi Cabbage with Lemon Tahini Yoghurt and Chilli Oil, Lebanese Flatbreads and Pomegranate, Pistachio and Apricot Jewelled Cous Cous, Yum!

What did you want to be when you grew up? I always wanted to work within the financial industry – I’m so glad that I ended up in Hospitality, I’m not sure I’m suited to

I’m the creative force behind everything beautiful and wonderful at Nomad, as well as being the chief taste tester! I originally trained as a hair stylist but since having two beautiful children, Charlie and Lucy, my time and effort has been invested in them and ensuring the future growth of Nomad Catering. I’m a stickler for cleanliness and organization and oversee the day-to-day operation of Nomad making sure it is a tight run ship.

I absolutely love everything sugar based and particularly love the Nomad Sharing Pavlova, it has White Chocolate and Raspberry Shards, Fresh Passion Fruit, Edible Flowers and Summer Berry Coulis with Edible Gold and plenty of Chantilly Cream.

My love of catering began 15 years ago in my hometown of Newcastle. Learning the ropes in a small butcher shop - working with fresh local produce had me hooked in seeking a career in catering. A change of pace and location found me working in an Italian restaurant. Gaining further insight into the broad spectrum in food varieties, tastes and sensations. My journey continued travelling to Cheshire working in a large hotel gaining further knowledge & the position of junior sous chef.

Finally arriving in Gods County and becoming a “Yorkshire Lass”. After working in numerous hotels I found my dream job at Nomad. I love working outdoors and in new and interesting places. Every week brings a new menu but at the center of every dish is passion, heart and soul. Being part of a special occasion brings great satisfaction, knowing all your needs are catered for. My favorite style of cuisine is definitley Greek. Our chargrilled chicken gyros with homemade flat bread will take you back to your holiday.

What did you want to be when you grew up? Nursery Teacher but two weeks work experience soon put a stop to that.

At Nomad I work alongside James and Stacey to bring fresh ideas to the Nomad kitchen, sharing both their passion and enthusiasm for all things new and exciting. From the very beginning of my career, food has always been a passion of mine, even as a young child. Having worked both in the UK and abroad, I feel I’m able to use my experience and travelling to bring flavoursome ideas to the table, combining ingredients from all around the world to and putting together inventive dishes.

The great thing about working for Nomad catering is the diversity and flexibility. One week we can be preparing Asian style street food and the next we can be working on a 6-course wedding breakfast. I love this style of working and it bodes well with my skill set. I like a challenge as it keeps things exciting and fresh.

I love the sharing platters and the BBQ element of our menus – it’s the variety and marrying of flavours that keep it exciting.

I’m your port of call for anything you need. Once you are booked in with us and have confirmed your menu with James, I will be your point of contact. I can help you with anything from changes to your menu to power requirements to ‘do we provide a cake knife?’ (yes, we do!). I’m relatively low maintenance (apart from when it comes to being fed) and will only get needy around 6 weeks before your big day where we will run through everything together.

I graduated from York St John University with a first class BA Hons Event Management degree in 2021. I did a lot of work experience whilst at university, launching a 'Women in Leadership' event for York Business Week in 2020. I worked as a Project Officer part time during my studies. Having worked in several different roles within hospitality and customer service since I was 16, Nomad seemed like a great marrying of skills! I started with Nomad in May 2021 and haven’t looked back since.

My favourite thing to inhale whilst working at Nomad is a szechuan salt and pepper king prawn or our dauphinoise potatoes, which are just dreamy.

Along with Jasmine, I will be your point of call in regards to your big day! I take a wider look at the business overall and make sure that we are able to run multiple weddings in different locations all on the same day. I love looking at the weekend and making sure everything has been thought about for your big day!

With over a decade in hospitality ranging from football stadiums to cooperate hotels and my most recent job being with a small boutique hotel running weddings for 4 years I believe I have seen almost everything. From working with a previous Prime minister’s security team to ensure their safety and having a calf delivered mid speech as a wedding gift from the best man to the bride. Over to you lovely people to try and add to that list.

Luckily I get to “taste test” every dish that comes out of the kitchen but I love the Bourbon BBQ Slow Cooked Beef Brisket! For the evening food the pork gyros definitely stands out!

I grew up on a dairy farm and seeing how hard that lifestyle was, I knew I wanted a 9-5 job. Somewhere clean, warm and dry, where I didn’t need to wear wellies and overalls. I have always had strong organisation skills, or as some would call it, ‘bossy’, so it appeared an office job was calling me.

I worked in Secretarial/Administrator posts in the Harrogate area, for 30 years in total. My employers ranged from car dealerships, construction industry, Funeral Directors and for the last 22 years, an educational charity, where I was a Customer Support Manager. I took redundancy in 2016.

After a year off, I found that I needed something to occupy a little of my time and keep me out of the shops. I had worked in various pubs and restaurants whilst at school and college and after a quick search of jobs on a casual basis, for one or two days a week, non-stressful, within 2 miles of home, the role of Kitchen Assistant with Nomad Catering popped up. The rest is history.

The food at Nomad is fantastic. Working with truly talented Chefs and sampling their creations is a joy. I especially love the spicy tempura prawns, curries, chocolate brownies and lemon posset, just to name but a few.

Here at Nomad I am the Jack of all trades, I account for all the stock, counting it in and out. I make sure that everything we need for an event is loaded onto the vans and gets there safely. I maintain all our equipment and ensure that both Front of House and the Kitchen Team have everything that they need. I am a one-man lifting machine!

Prior to Nomad I spent many years as a Building Contractor renovating properties around North Yorkshire. I have also worked for a furniture delivery firm (hence the Tetris-like precision that goes into our van loading). In between working, I spend my time making festive creations out of woodwork- I love all things DIY.

I also love travelling- my favourite place I have visited has got to be Egypt.

What did you want to be when you grew up? I wanted to be a Pilot or a Van Driver

Testimonials

We can’t thank James Brown and his incredible team enough for the outstanding catering at our wedding. From the very beginning, James was a joy to work with—professional, attentive, and genuinely passionate about creating an unforgettable experience for us and our guests. The food was absolutely phenomenal. Every dish was beautifully presented and bursting with flavor—from the canapés to the main courses and the brownies as part of the dessert. So many of our guests told us it was the best food they’d ever had at a wedding (and we completely agree!). Not only was the food amazing, but the service was seamless and full of warmth—every detail was taken care of with care and precision. James, thank you for going above and beyond to make our day so special. Your creativity, organization, and culinary talent played such a big part in making it all unforgettable. We are beyond grateful! With appreciation, Chris and Lydia.

Testimonials

James, Becky, Holly and the team did an absolutely fantastic job at our wedding! For such a special day you need an extra special team to make it happen. And that’s certainly what we got with Nomad. From start to finish the day ran so smoothly and the food was sensational. We’ve received so many thankyou letters since our wedding and every one complimented on the food, both meat and vegetarian options. Every single guest was looked after and never had an empty glass. Despite a rain shower in the evening the wood fired pizzas were a total success and special thanks to James’ sister for her incredible drawing of the dogs. What an amazing team to compliment such a wonderful day! Thankyou so much!

Buy your wedding dress a size up so you can make the most of this food! Nomad catered our wedding and wow did they provide. All the food was absolutely delicious, from the pizza van the night before, to the canapés, main meal and the incredible mac and cheese bar at the end of the night - it was absolutely faultless. Begging my friends to book these guys for their weddings now so I can treat myself all over again. 10/10
